Quick Chuck Roast

Quick Chuck Roast

Ingredients

  • 2-3lb chuck roast

  • 10 garlic cloves

  • 1 onion

  • 4 bay leaves

  • 1/2 lime

  • 2c. broth (chicken or beef, whatever you have)

  • 1 tbsp apple cider vinegar

  • 2 tsp oregano

  • 1/2 tsp black pepper

  • 1 tsp salt (you can always stir in more at the end, but some broths are saltier than others)

Place all listed ingredients into a crockpot on low for 6-8 hours or on high for 4-6 hours (depends on how thick your roast is). Once it is easy to pull apart and tender, let rest for 15 minutes before shredding into smaller chunks. Toss the beef in a small amount of the broth it cooked in and serve.

Pairs well with: this is a very neutral roast so it makes for great tacos, quesadillas, or just over some mashed potatoes or grits with a vegetable.

Notes: you can cut the roast into large chunks before cooking to lessen the cook time. I also prefer a fattier piece, as they tend to be more tender.
